Constellations aren't visible, but going north isn't difficult! It's a simple matter of there being an app for that. GPS may not be reliable, but they can always find north.
You can feel free to assume that both Jon and Daenerys would be able to resist things, but we assume UV rays and radiation are different from fire as it's treated in ASoIaF, so eventually this resistance would break down.
